Zucchini pizza bites are healthy low carb and tasty snacks which are easy to make and hard to resist! This dish is loved by kids and is a relief to parents because of how healthy it is at the same time. In order to make it, start by slicing your zucchini 1/4th inch thick.

After this, lightly coat your baking pan with olive oil and brush the tops of the zucchini with olive oil as well. Season the bites with salt and pepper. Broil the zucchini for about 2 minutes on each side. Top it with sauce and cheese. Sprinkle oregano seasoning and add pepperoni (optional). Broil for an additional 1-2 minutes. Here we have an alternate recipe for you which along with high in nutritional value, involves only two ingredients and can save your time. So if you have to go on a trek and can’t afford to eat pasta but crave for the same, we have a substitute for you.

All you need is mozzarella cheese and egg yolk. You are supposed to melt the cheese and mix it with eggs to prepare a dough. Spread the dough into a thin layer and slice it into thin pasta strips. Refrigerate the pasta overnight. Place the pasta into boiling water for one minute. Then drain the water and run cool water over it to prevent sticking. Top it with your favourite sauce and toppings and it’s ready to get packed!

3. Grilled Cheese Roll-Ups

These mouth-watering roll-ups are one of the easiest dishes to make and the time involved in making these is reciprocal to their taste. Their taste will make you crave for more. So here’s how you can make them. Take 8 white bread slices with their crusts trimmed. Using a rolling pin, flatten bread squares to 1/4th-inch thickness.

Place a cheese slice on top of each slice of bread, rolling up tightly. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add roll-ups to the skillet and cook them until they are golden brown and cheese has melted for about 3-4 minutes. You can add butter according to your own taste if you want. And there you have delicious grilled cheese roll-ups made in just a few minutes and ready to be packed!

4. Cheesy Garlic Broccoli

Cheesy garlic broccoli is a healthy and palatable dish which will help you keep your mood light and can be cooked within 30 minutes. All it requires is 3 ingredients, Broccoli, cheddar and garlic, and you have a toothsome dish ready to be packed and carried before travelling. Here’s what you need to do to make it. Preheat oven to 190 degrees C, spread out Broccoli in a medium rectangular casserole dish.

Stir the garlic and cheddar cheese together in a separate bowl. Sprinkle the cheese evenly over broccoli and add salt and pepper as per your taste. Bake it for around 20 minutes and put it in a small casserole or a lunch box to be carried easily and treat your taste buds with this healthy-cum-delicious dish.

5. Mozzarella Sticks

Mozzarella sticks are yet another crispy, cooked and delicious snack suitable to carry before travelling. It makes up to the list of scrumptious yet less time-consuming dishes as it barely takes 15 minutes to be made. This can also be served in a get-together and small party at your place! So, in order to make it, take 2 eggs and 1 tablespoon milk. Whisk eggs and milk together. Cut mozzarella cheese into 3/4 inch x 3/4 inch strips. Coat each piece of cheese with flour, then dip it in egg and roll them in bread crumbs. Dip it in egg and crumbs again.

Freeze them before frying. Heat vegetable oil in skillet and cook sticks for about a minute on each side or until golden and before the cheese starts to leak. Drain all the sticks on a paper towel and pack them with the sauce you like, whether pizza sauce, marinara sauce or your regular ketchup, for dipping and enjoy!

6. Chocolate Souffle

Going out without carrying anything sweet with you? Surely not a good idea. Cravings can develop anywhere and anytime, in the middle of a trek too! So here we have a 2-ingredient chocolate soufflé for you, easy to make (of course) and tempting enough to tease your taste buds. All you need to make this is 1/2 cup chocolate hazelnut spread and 2 eggs. Preheat the oven to 190 degrees C. Separate the egg yolks from the egg whites and place into two bowls. Mix the egg yolks in the chocolate hazelnut spread.

In the second bowl, whisk 2 egg whites until stiff peaks form. Fold 1/3 of whipped egg whites into the chocolate/egg yolk mixture until they are fully incorporated. Add the remaining egg whites to the mixture and fold gently, but thoroughly, until the mixture is smooth. Pour the mixture into a greased ramekin. Don’t forget to clean the rims so that soufflé rises evenly, and bake it for around 15 minutes. And you have a perfect sweet dish ready to be carried with you.

7. Peanut Butter Cups

Last but not the least, Peanut butter is liked by the majority of people. Imagine how amazing and toothsome it would be to have a peanut butter cup with you on a trip which has your two favourite things, peanut butter and chocolate! So, to make this, take semi-sweet chocolate chips and melt them in the microwave in a heat-safe bowl in 20-30 seconds bursts, stirring in between. Heat until almost all the chocolate chips have melted but allowed residual heat to melt the rest. In another heat-safe bowl, gently heat the peanut butter for 10-15 seconds, just until it’s loosened up a bit so it pours easier.

Layer the chocolate and peanut butter in a lined cupcake tin. Only pour the first bottom layer of chocolate and second peanut butter layer. Rap the tin on a flat surface to dislodge air bubbles and smooth out of the surface. Pop the entire tin in the freezer to set for about 15 minutes. Smooth on the top layer of chocolate and repeat. And you have your appealing peanut butter cups ready to be taken a bite off whenever you feel tired or low.
