5 Easy Baking Recipes for Your Sweet Cravings

When it comes to experimenting and making something delicious, baking is always a cool option. Especially in these times, being stuck at home, baking can help you beat your boredom and learn a fun new skill. 

My mother hardly ever got time to bake being a working lady so we used this time to try out some new recipes. With the vast variety of recipes, the internet has to offer it is very difficult to select recipes that suit you and to know the recipes which actually give good results for the majority of people. So I went scouring the net and YouTube and found these recipes.

We ended up collecting some of the most mouth-watering yet least time-consuming recipes. (The recipes I have mentioned are not my original recipes and have been collected from different places.)

So I would like to share a few of those, which require minimal ingredients that can be found mostly at home.

1. Dalgona Coffee Cake

This cake turned out to be the best one out of all that we tried at home, moist and delicious. The recipe is easy visit site with ingredients that you can find easily at home. It has a bittersweet taste and really brings out the coffee flavor.  

 There are two parts to the cake- the base cake and coffee cream frosting.

Ingredients (base cake):

  1. Maida/ refined flour – 150g 
  2. Cocoa powder – 40g
  3. ENO / baking soda – 1 tsp
  4. Refined oil – 50 ml
  5. Sugar – 100g
  6. Milk – 200ml
  7. Vanilla essence – few drops

Ingredients (coffee cream frosting):

  1. Instant coffee powder – 2 and a ½ tsp
  2. Powdered sugar – 4 tsp
  3. Hot water – 4 tsp
  4. For decoration, use melted Dairy Milk (optional)

Steps to bake:

  • Grease cake tin properly with oil. Place parchment paper in the tin and grease with oil again over the paper.
  • Preheat pan on medium flame on the gas stove for 10 minutes or preheat oven to 180oC.
  • Take a large mixing bowl and pour in the flour, sugar, cocoa powder, milk and refined oil/ butter.
  • Blend well together in the blender. Pour back into mixing bowl and add vanilla essence, ENO and 1 tsp water. Mix well.
  • Immediately pour into the cake tin and smoothen the top. Tap the cake tin on the counter to remove any trapped air bubbles.
  • Place cake tin in preheated pan/ oven. 
  • Check after 30-35 minutes with knife or toothpick. Let it cool
  • For the coffee cream take 2 and a ½ tsp of coffee, 4 tsp powdered sugar and 4 tsp hot water. Beat together for 10-15 minutes (till the mix becomes creamy and light). If you like your coffee light, then add a bit more sugar according to taste.
  • Remove cake from the tin and cover cake in coffee cream. You can decorate with melted Dairy Milk if you want.

2. Banana Walnut Bread

I’m not a very big fan of banana put in most things but I do love banana walnut cake. When we made the cake at home my mouth was watering just with the smell and this one too turned out to be great. So here’s the recipe we used.

Ingredients:

  1. 3 peeled overripe bananas
  2. ¾ cup of sugar
  3. ½ cup oil or butter
  4. 1 tsp vanilla essence
  5. 1 and ½ cup plain wheat flour
  6. 1 teaspoon baking powder
  7. ½ teaspoon baking soda
  8. ½ teaspoon cinnamon powder
  9. ¼ cup chopped walnuts
  10. ¼ cup black raisins(optional)

Steps to bake:

  • Grease cake tin properly with oil. Place a butter paper in the tin and grease with oil again over the paper.
  • Preheat cooker on medium flame on the gas stove or preheat oven to 180oC.
  • Firstly, take the ripe bananas and cut them into pieces. Add sugar and blend together with an electric beater. 
  • Further, add oil and vanilla extract.
  • Sieve maida, wheat flour, baking powder, baking soda, cinnamon powder and salt into the mix. Blend well to get a smooth batter. Do not over blend.
  • Add walnuts and some raisins and fold gently.
  • Transfer the cake batter into the cake mould or loaf pan.
  • Pat the tray twice to remove the air trapped in the batter.
  • Place the tray into the preheated oven or into the cooker. Bake the cake at 180o C or 356oF for 40 minutes in the oven or on a medium flame for 45 minutes in cooker.
  • After baking allows the cake to cool fully before removing from the mould. Later cut to slices and serve. Enjoy the aromatic bliss of banana cake!

3. Chocolate Mug Cake

This is one of the fastest and most fail-safe recipes I came across. It is super easy to make and makes a great short notice dessert. Nutella lovers this one’s for you!

Ingredients: 

  1. 2 tbsp all-purpose flour
  2. 1 tbsp sugar
  3. 1 tbsp unsweetened cocoa powder
  4. ¼ tsp baking powder
  5. 1 tbsp vegetable oil
  6. 3 tbsp milk
  7. 1 tbsp Nutella
  8. 1 mug 

Steps to make:

  • Take a mug and put the 2 tbsp flour, 1 tbsp sugar, 1 tbsp unsweetened cocoa powder and ¼ tsp baking powder and mix together.
  • Further, add 1 tbsp oil and 3 tbsp milk. Mix well together until you get a smooth consistency.
  • Now take a 1 tbsp full of Nutella and put it into the batter. DO NOT mix the Nutella with the batter. This will ensure that you get flowing chocolate inside the cake.
  • Microwave for 1 minute and you get one delicious chocolaty mug cake ready to eat!

4. Chocolate Chip Cookies

I found this recipe just last week and it is absolutely superb. With simple ingredients, it will positively make your mouth water with delight.

Ingredients:

  1. ¾ cup Maida
  2. ¼ cup unsalted butter
  3. ¼ cup + 2 tbsp powdered sugar
  4. ½ tsp baking powder
  5. ½ tsp vanilla essence
  6. ¼ cup Choco chips
  7. Pinch of salt

Steps to make

  • Preheat oven at 180oC and let it stay for 10 minutes. 
  • Take ¼ cup of unsalted butter at room temperature.
  • Add ¼ cup and 2 tbsp powdered sugar. Mix together with a hand whisk or electric beater properly.
  • Whip it till it becomes light and airy. Scrape sides with a spatula in between so that the whipping is even.
  • Sift in ¾ cup Maida and ½ tsp baking powder.
  • Add a pinch of salt and mix it in.
  • Now put ½ tsp of vanilla essence and mix well together with a spatula.
  • Finally, add ¼ cup of chocolate chips and mix together. Avoid over mixing as it may change the colour of the white dough due to spreading of chocolate. 
  • Take a baking tray and line it with aluminium foil. On top of the foil place butter paper.
  • Divide the cookie dough into small balls and one by one flatten them gently with your hands.
  • Place these on the baking tray. Optionally you can add more chocolate tips on the top.
  • Put the tray into the oven and let the cookies bake for 15 minutes.

5. Parle-G Vanilla Cake

Parle-g cakes are the most basic and quick cakes to bake. I baked my first experiment cupcake with crushed Parle-g in the fourth grade and because I was completely new to baking, I assumed it to be a success, which it partly was! I had used Parle-g biscuits since I had those but you can use any glucose biscuits.

Ingredients:

  1. 300 grams biscuits (3 single packs)
  2. ½ cup of sugar
  3. ½ tsp baking powder
  4. 1 cup mil
  5. 1 tsp vanilla extract
  6. ¼ cup walnuts/ almonds

Steps to make:

  • First, put the biscuits along with the refined/ granulated sugar into the mixer grinder. Let it mix till the mixture is even and there are no chunks or lumps.
  • Shift the mix into the mixing bowl and add in ½ tsp baking powder. Mix it well so it spreads evenly.
  • Now pour in 1 cup of milk and keep mixing till the batter is nice and smooth. Add in 1 tsp of vanilla extract. 
  • Throw in ¼ cup of chopped almonds/ walnuts. I had used almonds because I didn’t have walnuts at the time, but you can use either according to availability. However, the cake tastes equally yummy without the nuts.
  • Grease your cake tin generously with vegetable oil or melted butter. Place in the parchment paper as an extra precaution so that the cake doesn’t stick. Tap the cake on the counter twice or thrice to make sure it has settled and to avoid air bubbles
  • Preheat the oven at 180oC for 10 minutes. You can also place a cooker with a wire rack/ inverted plate inside, on a medium flame on the gas stove. Make sure to remove the whistle and let it heat for ten minutes.
  • You can now put in the cake tin and put the lid on. It takes about 45-50 minutes to bake in the cooker and about 30 minutes in the oven.
  • Let it cool and you have one great cake ready to be devoured!

I hope these recipes will turn out as scrumptious for you guys as they did for me. The most important part is to enjoy the experience and time spent with your family while baking and not the final outcome. Don’t forget to take a break, to bake a cake!!
